This salad is awesome. The dressing is incredible (totally wasn’t sure I’d like it with that much maple syrup, but OMG); the quinoa falafel are easy to make and so packed with flavor. We added the baked olives too which are life-changing to say the least. All the flavors worked so well together, and this is coming from a self-proclaimed salad-hater! Can’t wait to make this again; my husband will definitely be requesting it!

Brilliant. Will definitely be making again. I served over spinach and arugula and topped with roasted chic peas, feta, green olives and avocado in addition to the toppings in the original recipe.
