As for the soaking – it’s to remove the starch from the potatoes which, in turn, makes them more crispy in the oven! :)

Pretty time-consuming (not hard, but puttery), but delicious and beautifully rustic — looked like something straight out of a bistro or trattoria. Followed your instructions to the letter, but I’m curious: what is the purpose of the one-hour soak?

My new favorite potatoes. I will definitely be making these as a side the next time I have guests over for dinner!
